When you want a meal that combines crispy, golden chicken with a rich, savory rice base, this Spanish-inspired chicken thigh rice bake is the perfect choice. It’s a one-pan dish that delivers bold flavors and satisfying textures, making it ideal for busy weeknights or weekend dinners. The crispy chicken skin contrasts beautifully with the tender, spice-infused rice, creating a dish that feels both comforting and exciting.

Ingredients You’ll Need
This recipe uses simple ingredients that come together to create a dish full of Spanish flair:
For the Chicken
4–6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt (reduce to ½ teaspoon if broth is salted or using 2 Sazón packets)
½ teaspoon black pepper
For the Rice Base
1 cup jasmine or long-grain rice
1 small onion, diced
1 red bell pepper, sliced
3 cloves garlic, minced
1 packet Sazón (or 1 tablespoon if using from a jar)
½ teaspoon smoked paprika
½ teaspoon turmeric or a pinch of saffron
½ teaspoon dried oregano
½ (14.5 oz) can diced tomatoes with juices
2 cups chicken broth
¼ cup green or Castellano olives (optional but adds a nice touch)
Fresh parsley or cilantro for garnish
Lemon wedges for serving
How to Prepare the Chicken and Rice
Step 1: Season and Sear the Chicken
Start by preheating your oven to 400°F. Pat the chicken thighs dry with paper towels to ensure the skin crisps up nicely. Mix the smoked paprika, garlic powder, onion powder, salt, and black pepper, then rub this seasoning evenly over the chicken.
Heat olive oil in a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 4 to 5 minutes until the skin turns a deep golden brown. Flip the thighs and cook for another 2 to 3 minutes. Once seared, remove the chicken from the skillet and set it aside.
Step 2: Build the Spanish Rice Base
In the same skillet, add the diced onion, sliced red bell pepper, and minced garlic. Sauté for 2 to 3 minutes until the vegetables soften and release their aroma.
Add the rice along with the Sazón, extra smoked paprika, turmeric or saffron, and dried oregano. Stir and toast the rice and spices for about 1 minute to bring out their flavors.
Pour in the diced tomatoes with their juices and the chicken broth. If you’re using olives, stir them in now. The olives add a subtle briny flavor that complements the spices and chicken.
Step 3: Bake Everything Together
Nestle the seared chicken thighs on top of the rice, skin-side up. Bring the mixture to a gentle simmer on the stovetop, then transfer the skillet to the oven uncovered.
Bake for 20 to 25 minutes, or until the rice has absorbed the liquid and the chicken reaches an internal temperature of 165°F. This step allows the chicken to finish cooking while the rice becomes tender and flavorful.
Serving and Finishing Touches
Once the bake is done, sprinkle fresh parsley or cilantro over the dish for a burst of color and freshness. Serve with lemon wedges on the side. A squeeze of lemon juice over the chicken and rice brightens the flavors and adds a pleasant tang.
This dish pairs well with a simple green salad or roasted vegetables for a complete meal. The combination of crispy chicken skin and the rich, aromatic rice makes every bite satisfying.
Why This Recipe Works
This Spanish-inspired chicken thigh rice bake shines because it balances textures and flavors perfectly. The chicken skin crisps up in the skillet, locking in juices for tender meat underneath. The rice absorbs the spices, broth, and tomato juices, creating a deeply flavorful base.
Using bone-in, skin-on chicken thighs adds richness and moisture that boneless cuts can’t match. The Sazón seasoning and smoked paprika give the dish its signature Spanish taste, while turmeric or saffron adds a subtle earthiness and vibrant color.
The one-pan method keeps cleanup easy and allows the flavors to meld as the dish bakes. It’s a practical recipe that doesn’t sacrifice taste or presentation.
Tips for Success
Dry the chicken well before seasoning to get the crispiest skin.
Use an oven-safe skillet like cast iron to go from stovetop to oven without transferring.
Don’t skip toasting the rice and spices; it unlocks deeper flavors.
Check the chicken temperature with a meat thermometer to avoid overcooking.
Add olives if you like a salty, briny contrast, but they’re optional.
This recipe is flexible and forgiving, making it a great choice for cooks of all skill levels.

Easy to follow, easy to find ingredients, and turned out great! Used capers as I didn't have green olives on hand. Excited to try this again with olives. Highly recommend.
